We, the Pistis family, produce Fregulathe traditional pasta of Sardiniahandcrafted with passion and meticulous attention to quality.<\/p>\n

Born in the heart of Sardinia and backed by nearly 100 years of history, our fregula is inspired by the ritual of S’Incumentzu. Just like a sourdough starter, this special base guides us through every production cycle, preserving the continuity and authenticity of the past.
\nOur slow and patient manual process, combined with careful sifting, allows us to create three unique sizes, designed to enhance various recipes and bring traditional flavors to your table.<\/p>\n

Every day, we select the finest zero-kilometer raw materials. The heart of our fregula is Sardinian durum wheat, grown and milled right here in our land. This rich and premium semolina, combined with water and salt, gives the pasta its authentic flavor and perfect texture.
\nTo this base, we add fresh eggs from free-range chickens to ensure a rich and natural dough, along with our precious saffronselected from small local producerswhich gives the fregula its delicate aroma and characteristic golden hue.
\nOur production is entirely artisanal: every single step is performed by hand, without haste, just as our grandparents used to do. With patience, we knead and sift the semolina until we obtain those small, rough, and irregular grains that define fregula. We use the sieve to select the different grain sizes, respecting tradition and guaranteeing a product of the highest quality.<\/p>\n

The result is a pasta that speaks of Sardinia, authenticity, and passion. A product that, thanks to the care in selecting ingredients and the attention to detail during processing, brings the true flavors of our land to the table.<\/p>\n

Once production is complete, we move on to drying, the longest phase of the process. This stage, which can last from 16 to 26 hours depending on the daily humidity, takes place at low temperatures to preserve the product’s wholesomeness. We use a state-of-the-art drying chamber that allows for a slow and thorough drying process, ensuring a top-quality result.<\/p>\n
